In 2013, Irene Gutiérrez opened up this establishment serving Peruvian-fusion cuisine in the seafaring district of Santa Catalina in Palma. Sumaq, a Quechan word meaning “delicious”, defines to perfection the creations of this chef from Cuzco — some of which draw inspiration from Nikkei cuisine —, the fruit of the contact between the Japanese and Peruvian cultures. An explosion of flavours, colours and aromas made with ingredients from Peru, Japan or China, which materialises in proposals like ceviches and tiraditos.
