This project by chef Santi Taura aims to dignify – even more – Balearic recipes, produce and gastronomy. A space located inside his restaurant in Lloseta that presents traditional cuisine from a personal perspective: the main ingredient of each recipe is “Km 0”, or local, with particular attention paid to seasonal produce and the optimum point of flavour. Santi Taura cooks his daily recommendation – which is not revealed until it is time to taste it – in front of diners.
